Mom's Meatloaf
Sorry it's been so long since posting. We had company last week and this week, I'm fighting the flu plus studying for a test in my night class. The cooking I have been doing is pretty quick and easy.
Today I'm sharing Andy's mom's meatloaf recipe since it's the season for comfort food.
It makes a big meat loaf. Can you tell she raised 3 boys?
Mom's Meat Loaf
2 lbs. ground beef
1/2 lb. ground pork sausage
1 envelope onion soup mix
1/2 medium onion chopped
2 eggs
1/2 tsp. pepper
1 tsp. salt
1 tsp. accent (optional)
2 pieces sliced bread torn into pieces or whirled into crumbs in food processor.
Mix all ingredient together with your hands in large bowl. Shape into loaf or place in loaf pan. (I prefer the glass loaf pan for meatloaf.
If it's too, watery, add more bread crumbs, if not watery enough you can add a little Worcestershire or milk.
Preheat the oven to 375 degrees of 350 if using glass dish. Bake until correct temperature for ground beef (usually 1 1/4 hours baking time)
You can bake this with potatoes and carrots along side when using a larger casserole dish which is what we often do.
