Sweet Corn Bread
This is my favorite cornbread recipe
1 1/2 cup all-purpose flour
2/3 cup granulated sugar
1/2 cup yellow cornmeal
1 Tbsp. baking powder
1/2 tsp. salt
1 1/4 cups milk
2 large eggs, lightly beaten
1/3 cup vegetable oil
3 Tbsp. butter, melted
Preheat oven to 350 degrees. Grease a 9"x 9" baking pan. (You could use an 8" x 8" or even a round cake pan.)
Combine flour, sugar, cornmeal, baking powder and salt in medium bowl. Combine milk, eggs, oil and melted butter in small bowl. Mix well. Add to flour mixture and stir until just blended. Pour into prepared pan.
Bake for 25 to 30 minutes or until top is starting to turn golden brown or until toothpick in center comes out clean. Cool slightly and serve warm.

Is this the same delicious cornbread that made Mar go into labor. I think that was the most memorable playgroup meeting ever. LOL - Heather
ReplyDeleteYes, it is! Mar hasn't forgotten either. LOL
