Stuffed Green Peppers (Microwave)

This is our favorite stuffed pepper recipe. The base recipe came from Butter Busters cookbook. I've altered it to make it my own.

Stuffed Green Peppers

4 large green peppers

3/4 lb ground beef
1 small onion, chopped
1 clove garlic, crushed
1 cup cooked rice

1 Tbsp. brown sugar, packed
1 Tbsp. balsamic or cider vinegar
1 Tbsp. chili powder
3/4 tsp. cumin
1/2 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. ground black pepper

Slice stems off green peppers. Remove seeds and membrane. Rinse and set aside.

Brown ground beef until no longer pink. Add onions and garlic and saute a few minutes longer. Mix in rice, sugar, vinegar, chili powder, cumin, cinnamon, salt and pepper. Stir until well blended.

Scoop meat mixture into peppers and place them in a casserole dish that has been sprayed with non-stick cooking spray. Cover with waxed paper and microwave on high for 3 to 4 minutes. Microwave on medium 50% power for 12 to 14 minutes until peppers are just tender. Serve

You can add cheese near the end, you can serve topped with salsa. We like it with ketchup. You can also use ground turkey instead of beef. There is usually extra filling so I place that in the bottom of the casserole and set the peppers on top. (Two of us scoop the filling out of the pepper and discard most of the pepper.) I'm sure you could bake this in an oven as well. Probably at 350 degrees for at least 30 minutes. I'd probably cover if I was cooking in the oven to prevent them from really drying out.
