Mom's Pear Pie
My mom has been making this simple pear pie as long as I can remember. I used to ask for it instead of a birthday cake. Right now, I've got one in my oven (toaster oven, since the big girl oven is still broken.)
Combine:
1/4 cup butter
1 cup sugar
1/2 to 3/4 cup all-purpose flour
1/2 tsp. cinnamon
4 cups sliced fresh Barlett pears
Put part of the crumbly mixture in the bottom of an unbaked pie shell. Add 4 cups of sliced fresh pears. Top with remaining crumbly mixture.
Bake at 450 degrees for 10 minutes and then reduce oven to 350 degrees and bake approximately another 40 minutes more.
Note: if the pears are very ripe and juicy, I always increase the amount of flour in the crumbly mixture.
