Crescent Rolls

I got this good Crescent Roll recipe from one of the Thirty Day Gourmet gals cookbooks. Their website: http://www.30daygourmet.com/ (blogger isn't letting me insert a link so you'll have to cut and paste.

I make the dough in my bread machine but you can also make by hand. These make great dinner rolls but I often use them to make "My Fun Buns" a homemade version of hot pockets. I'll enter the recipe for the "Fun Bun" insides tomorrow.


Crescent Rolls

2/3 cup milk
1/3 cup margarine
2 eggs

3 cups bread flour
1/4 cup sugar, divided when making by hand
1 tsp. salt
1 1/2 tsp. year

3 Tbsp. melted margarine for brushing on dough circles.

Bread machine instructions: Pour milk into microwaveable container.
Cut the margarine into pats and add to the milk.
Microwave on high for 1 minute to warm up the milk and to begin to melt the margarine. (It won't completely melt and that's ok.)
Remove the dish from the microwave and stir. A
dd ingredients to your bread machine following your bread machines normal order (i.e. liquids in first, etc.)
Select dough cycle.
When done remove from machine.
Punch down and let rest for 10 minutes.

To make by hand: Pour milk into saucepan.
Warm milk until it reaches 115 degrees.
Add 1 Tbsp. sugar and stir to dissolve.
Sprinkle yeast over milk mixture and allow several minutes to dissolve.
Melt 1/3 cup margarine in microwave or small saucepan.
In large mixing bowl, mix together the melted margarine, eggs, remaining sugar, salt and half the flour.
Pour in the yeast mixture. Mix well.
Add the remaining flour.
Knead for 6 to 10 minutes.
Allow the dough to rise for 1 hour in a greased bowl.
Make sure you cover dough with wet cloth.
This will prevent it from drying out.
Punch down.
Cover and let rest 10 minutes.

To Shape Dough: Divide the dough into thirds and place on lightly floured surface.
Roll each dough ball into a 12-inch circle.
Brush some of the melted margarine onto each circle.
Cut each circle into 8 wedges.
Starting at the wide end of each wedge, roll the dough toward the point.

Place the rolls point side down on a greased baking sheet two inches apart. Cover and let rise for 30 to 40 minutes or until nearly double in size.

Bake at 375 degrees for 8 to 10 minutes or until golden brown.

To Freeze: Remove from baking sheet.
Place in ridge container or freezer bag. Allow to cook. Seal, label and freeze.
