Carol's Potato Soup
Here is another easy recipe that is on my stove right now.
Carol's Potato Soup
5 to 6 medium potatoes, peeled and diced in approximately 1-inch cubes
(Sometimes I leave some of the peeling on depending on my mood or the potatoes.)
water to cover
2 to 3 leeks
1-- 12 oz. can evaporated milk
1/4 to 1/2 tsp. red pepper flakes
1/2 tsp. ground black pepper
1 tsp. salt.
Peel and dice potatoes.
Place in a bowl and cover with cold water.
Cut tops and bottoms off leeks. Cut stalk in half lengthwise and clean well. Cut into 1/2 inch half circles.
Saute the leeks in a small amount of olive oil in large saucepan.
Add the potatoes and water, salt, pepper and red pepper flakes.
Boil 20 minutes or until the potatoes are tender.
Turn the heat down to simmer.
Using a potato masher, mash some of the potatoes.
Add the can of evaporated milk and simmer until heated thoroughly. Serve
