Sweet Spinach Salad
In an effort to eat closer to nature and to consume less premade items loaded with extra preservatives and chemicals, we enjoyed this spinach salad with homemade dressing last night for dinner.
3 Tbsp. orange juice
2 Tbsp. sugar
2 Tbsp. balsalmic or cider vinegar
1 1/2 tsp. chopped onion
1/4 tsp. salt
1/2 cup olive oil
1 package fresh baby spinach
1 can 15 oz. drained mandarin oranged
2/3 cup slivered almonds, toasted (optional)
In a blender or small food processor combine the orange juice, sugar, vinegar, onion and salt. While processing, gradually add oil in a steady stream. Refrigerate for at least one hour or until chilled.
On salad plates arrange the spinach, mandarin oranges and almonds. Drizzle with dressing.
(I liked this so much that I'm having it again for lunch today.)
