Carol's Killer Cookies
By drastically reworking a Betty Crocker Oatmeal Cookie Recipe, I came up with these rich cookies.
1 cup sugar
1 cup packed brown sugar
1/2 cup margarine or butter softened
1/2 cup shortening
3/4 cup peanut butter
1 tsp. vanilla
2 eggs
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. baking powder
1/2 tsp. salt
3 1/2 cups quick-cooking oats
2 cups flour
1 cup raisins or chopped nuts or chocolate chips.
Heat oven to 375 degress. In large bowl, cream together sugars, margarine, shortening, peanut butter and vanilla. Add eggs one at a time, mixing well after each addition. In separate bowl mix together remaining ingredients except nuts, raisins and/or chocolate chips. Add to creamed mixture and mix well. Last add in any extras (I have added coconut sometimes in addition to chocolate chips and nuts.)
Drop by spoonfulls about 2 inches apart onto ungreased cookie sheet. Bake until light brown 10 to 15 minutes depending on oven.
If the dough seems a bit too "mushy" you can always add a bit more oatmeal and or/flour. You can also press the dough into a 9" x 13" pan and bake as bars.
