Apple Cookies

My great aunt, Isabel gave me the recipe for these cookies. I made them often when I was a kid then lost the recipe. Fortunately, mom still had a copy.

1/2 cup shortening
1 cup sugar
1 tsp. vanilla
1 large apple, finely, grated.
2 cups flour, sifted
1 tsp. baking powder
1 tsp. baking soda
1/2 to 1 tsp. salt

Blend the shortening,sugar and vanilla well. Add the grated apple and mix well. Sift the flour together with the baking powder, baking soda and salt over the bowl with the first set of ingredients. Blend well and chill in refrigerator at least 1 hour. To bake roll into balls the size of a walnut. Roll the ball into a mix of sugar and cinnamon (3 tsp. sugar to 1/2 tsp. cinnamon.) Bake at 375 degrees for 12 minutes or until light brown.
