Stuffed Green Peppers

We're having this for dinner this evening. It's fairly quick and finished in the microwave. It's our favorite stuffed pepper recipe.

4 medium or large green peppers
3/4 lb. ground beef or turkey
1 small onion, chopped
1 clove garlic, minced
1 cup cooked rice
1 Tbsp. brown sugar
1 Tbsp. cider vinegar (can also use balsamic)
1 Tbsp. chili powder
3/4 tsp. cumin
1/2 tsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. ground black pepper

Slice the stems off the green peppers. Remove seeds and membrane. Rinse and set aside to dry. Brown ground beef in skillet. When almost done add onion and garlic and saute until meat is thoroughly cooked. Add remaining ingredients. Mix well and heat another few minutes. Stuff peppers with meat mixture and place in 2-qt. casserole glass casserole dish. (I usually have more filling than peppers so I place a small amount of the filling at the bottom of the dish and place the stuffed peppers on top.) Cover with waxed paper. Microwave on high 3 to 4 minutes. Microwave on medium 50% power until peppers are just tender, 12to 14 minutes.

You can sprinkle cheese on top and them microwave until melted. Can also serve with salsa. We usually serve with ketchup.
