Slow Cooker Creamy Italian Chicken
I love my slow cooker/crock pot. . . it's an ugly beast of a thing I got at the Goodwill for about $7. I've had it now for at least 4 or 5 years and it's paid for itself in convenience many times over. Here is an easy and tasty recipe I found on a diet site called Spark People. It was submitted by used Orangecowcat. (No lie.)
1.5 lbs. boneless skinless chicken breasts
1 pkgs. Good Seasons Italian salad dressing mix
1/4 cup water
1--8 oz. pkg. low fat cream cheese
1 can 98% fat free cream of chicken soup
3 cups cooked white, long grain rice or noodles
Place chicken in slow cooker
Mix together Italian dressing mix and water. Pour over chicken
Cover and cook on high for 4 hours or low for 8 hours.
Mix together cream cheese and soup in separate bowl.
Carefully remove chicken from crock pot to plate.
Pour cream cheese/soup mixture into crock pot and mix together well with the dressing in the bottom.
Return chicken to slow cooker and mix gently to shred the chicken.
Cook on low until heated thoroughly.
Serve with rice or noodles
(If necessary to thin the sauce a little use skim or low fat milk in small quantities until you reach desired consistency.)
