Peanut Butter Granola

This is our favorite homemade granola recipe

2 Tbsp. margarine or butter

1/3 cup peanut butter
1/3 cup honey
1/2 tsp. vanilla
1/4 tsp. salt
3 cups rolled oats
1/2 cup raisins (optional)

Begin by melting margarine, peanut butter together in medium sauce pan. Add the honey, vanilla and salt. Stir the mixture until it's smooth and hot. (You don't have to boil it just get it blended and hot.)

Add the oatmeal to the hot peanut butter mix and stir until the oats are coated well. Spread the mixture out evenly on a cookie sheet. Bake at 375 for ten minutes.

It will be brown and crispy. Cool completely and transfer granola to a sealed canister. Add raisin if you wish to the mix when it's cooled.

You can also add other dried fruits, etc. This is great with yogurt on it.
