Orange Marmalade Chicken



Orange Marmalade Chicken or Last night's dinner

(Yes, I know it doesn't exactly match my theme for the day plan. . . I'll implement that next week.)

1/2 cup orange marmalade
3 green onions, chopped
1 Tbsp. Dijon Mustard
2 tsp. fresh lemon juice
1/4 tsp.crushed red pepper flakes
4 (4-oz) skinless, boneless chicken breasts
salt, pepper and garlic powder to taste.
1/3 cup water or chicken broth

Brown the chicken breasts in large skillet in small amount of olive oil.
Season with salt and pepper and cook thoroughly.
Meanwhile mix the marmalade, green onions, mustard, lemon juice, red pepper flakes and water.

Add to chicken and reduce the glaze until it thickens slightly. Serve.

This can be served over rice or noodles. You can also increase the amount of red pepper flakes or add a dash or two of hot sauce if you like it spicy.
