Homemade Italian Sausage Patties
You can adjust the spices to your own taste.
2 tsp. ground pepper
2 tsp. dried parsley
2 tsp. Italian seasoning
1 tsp. garlic powder
1/4 tsp. crushed red pepper flakes
1 1/2 tsp. crushed anise or fennel seeds
1 tsp. paprika
1 tsp. dried minced onion
4 tsp. salt
2 lbs. ground pork
In small bowl combine seasonings.
Place pork in large bowl. Sprinkle seasonings on top. Mix well with hands.
Form patties. Fry in skillet.
(I bet you could also make this with ground turkey or ground chicken. It would have a slightly different taste but it should be lower in fat. You might have to add egg or moisture to help the meat bind together into a patty or you could simply fry it up as crumbles. I'm going to try soon.)
