Tortellini with Veggies
This was Sunday evening's dinner. Husband and daughter really liked it. I felt it needed a bit more zing. Next time I'm going to splash a tablespoon or two of Italian salad dressing on noodles and veggies before serving.
1 medium red pepper, sliced
1 medium green pepper, sliced
1 1/2 cup snow peas, sugar snap peas or green beans
1-15 oz can diced tomatoes
1 medium onion, sliced
2 Tbsp. olive oil
2 cloves, garlic, minced
5 or 6 fresh basil leaves, shredded
1 package of frozen Italian sausage and cheese tortellini (just cheese would work just as well for my non-carnivorous friends.)
salt and pepper to taste
1/2 cup grated parmesan cheese
Italian salad dressing.
Started water for tortellini and then worked on cutting the vegetables.
Put tortellini in boiling water and followed directions on package.
Heat 2 Tbsp. olive oil in large skillet and sauted the vegetables until just they were still slightly firm. Seasoned with salt and pepper (Here is where I'd splash a little Italian salad dressing on the noodles and veggies.) Serve topped with grated parmesan cheese.
