Asian Chicken Lettuce Wraps

My daughter and I discovered these recently.

We added a dipping sauce made from 1/4 cup soy sauce and a splash of sesame oil.
I used the leftovers next day on top of a fresh green salad.

Asian Chicken Lettuce Wraps
(Serves 4)

4 chicken breast halves, boneless, skinless
2 cloves garlic, minced
1/2 teasp. fresh ginger, minced
1/2 cup red peppers, seeded, and chopped
2 Tbsp. low sodium soy sauce
1/2 tsp. red pepper flakes
1/2 Tbsp. rice vinegar
2 Tbsp. olive oil
2 tsp. green onion, minced
1 Tbsp. sugar or sugar substitute
8 iceberg lettuce leaves

Cut chicken into bite-sized pieces.

Heat oil in large skillet over medium high heat.

Add chicken and cook until almost done. Then add ginger and garlic and cook until chicken is cooked thoroughly.

Add bell pepper and continue cooking until peppers are still slightly firm.

Add soy sauce, red pepper flakes, rice vinegar, green onions and sugar

Stir well and continue cooking a minute or two to disperse all the flavors.

Serve immediately and wrap in the crisp iceberg lettuce leaves.

(This is messy but very good especially with the dipping sauce.)
